Tomato, red onion and chorizo salad recipe

Heat a little of the olive oil in a nonstick pan and sauté the chorizo until golden.

In a large bowl combine the rest of the oil with the vinegar. Add the onion, tomatoes, parsley and warm chorizo. Stir together well and season.

Serve with olives or other tapas and some crusty bread.
