Super speedy to prepare, this elegant and refreshing Christmas cocktail combines the aromatic, bitter flavour of Campari with fruity pomegranate and punchy prosecco. Add fresh mint sprigs for a burst of colour.
Divide the ice between the 4 glasses.
Pour equal measures of Campari into each glass, top with pomegranate juice then fill to the top with proseccco.
Stir and garnish each drink with the pomegranate seeds and a mint sprig.
