Method

  1. Preheat the oven to gas 4, 180°C, fan 160°C. Put the cauliflower leaves on one roasting tray and the wedges on a second. Drizzle over 1 tbsp oil and the paprika. Season, toss to coat and roast for 25 mins until tender.
  2. Meanwhile, mix the sauce ingredients in a bowl and season to taste. Set aside.
  3. Let the cauliflower wedges and leaves cool for 5-10 mins, then finely chop and add to a bowl. Crumble in the cheese and add the eggs, flour, dried and fresh mint; mix until just mixed.
  4. Heat 100ml oil in a heavy-based frying pan over a medium-high heat until a drop of batter sizzles when added. Working in batches, add 1 tbsp batter at a time and fry the fritters for 3-5 mins each side until golden; repeat to make 12. Keep warm in a low oven.
  5. Add the yogurt to a bowl and top with most of the mint sauce. Drizzle the remaining mint sauce over the fritters. Serve with a green salad, if you like.
