Fresh and grassy matcha powder works beautifully with sweet and fragrant elderflower cordial in this interesting mocktail. It's vibrant, refreshing and something a bit different. Swap the soda water for prosecco if you want a cocktail. See method

Ingredients

  • 1 tsp matcha powder
  • ice cubes
  • 50ml elderflower cordial
  • 200ml soda water or prosecco
  • 2 fresh mint sprigs​

Method

  1. Put the matcha powder into a heatproof jug and whisk in 100ml boiling water; allow to cool completely.
  2. Fill 2 wine glasses with ice cubes. Mix the elderflower cordial and the cold tea together and divide between the glasses.
  3. Top each with the soda water (or prosecco) and garnish with a fresh mint sprig.
