With a hint of spice and a hit of aromatic basil, this zesty refresher is perfect for enjoying on a sunny day. If you haven't got caster sugar on hand, any sugar will do. You can also swap fresh lime juice for bottled if you prefer. See method

Ingredients

  • 50g caster sugar
  • 1⁄2 red chilli, roughly chopped
  • 30g pack fresh basil
  • 6 limes, juiced
  • ice, to serve
  • 1 orange, sliced into 6 rounds
  • 900ml soda water
If you don't have any limes, try a lemon instead

Method

  1. With a pestle and mortar, muddle together the sugar, chilli and 10g basil until smooth. Transfer to a jug and add the lime juice. Mix well and divide between 6 ice-filled glasses.
  2. Divide the orange slices between the glasses and top up each with soda water. Garnish with the remaining basil to serve.
