Ingredients

20g fresh mint leaves
60ml elderflower cordial
crushed ice
300ml prosecco
200ml soda water
2 mint sprigs
2 lime slices

If you don't have any limes, try a lemon instead

Method

Muddle the fresh mint leaves in a pestle and mortar or cocktail shaker until gently crushed. Add the elderflower cordial and mix, then strain through a fine sieve between 2 wine glasses.
Add crushed ice, then add 150ml prosecco to each glass. Top up each drink with 100ml soda water and garnish each with a sprig of mint and a slice of lime.
