Ingredients

  • 50ml vodka
  • 50ml fresh lemon juice
  • ice cubes
  • sparkling water
  • lemon slices (optional)
  • finely sliced green chilli (optional)

For the spiced syrup

  • 200g white sugar
  • 6 green chillies, sliced
  • ½ tsp crushed chillies

Method

  1. Make the syrup by adding the sugar to a heatproof jug with the chillies and crushed chillies. Give everything a good mix, bruising the chillies into the sugar to release their fl avour. Add 100ml boiling water, mix until the sugar has dissolved and set aside to steep for 1-4 hrs. Strain through a sieve into an airtight container. 
  2. To make the cocktail, put 50ml spiced syrup, the vodka and fresh lemon juice in a cocktail shaker with a handful of ice and shake vigorously for 1 min. Strain into a tall glass over fresh ice cubes, then top up with sparkling water and garnish with the sliced lemon and green chillies, if using.

Tip: This makes 300ml syrup, so enough for 6 cocktails. The spiced syrup will keep in the fridge for up to 2 months in a sterilised jar* so you can whip up a cocktail when you like.

*To sterilise glass jars, wash in hot, soapy water and rinse well. Dry in the oven for 15-20 mins at gas 1, 140°C, fan 120°C until hot and completely dry. Boil metal lids and rubber seals for 10 mins, then leave to dry.
