Was there ever a more aptly-named fruit for Valentine’s Day? Combine passion fruit with lemon and a splash of gin for this vibrant and sweet cocktail. See method

Ingredients

  • 60ml dry gin
  • 60ml fresh lemon juice
  • 2 passion fruits, halved
  • 30ml sugar syrup
  • 2 handfuls ice cubes
  • soda water
  • lemon wedges, to garnish

Method

  1. In a small jug or cocktail shaker, combine the gin, lemon juice, passion fruit pulp and seeds and sugar syrup. Give everything a good stir or shake.
  2. Fill 2 highball glasses with ice and divide the gin mixture between each. Top up with soda water and garnish with a lemon slice. Serve immediately.

Top tip: If you don't have time to make your own sugar syrup, swap it for a squeeze of honey.
