For a non-alcoholic treat, this sparkling peachy drink will really hit the sweet spot.
Put the peaches, syrup and mint leaves in a blender and whizz until smooth, but you can still see tiny flecks of the peach skin.
Put a handful of ice cubes in 4 hi-ball glasses, then divide the peach purée between them and top with sparkling water. Stir, then decorate with a mint sprig and serve.
