It's oh so easy being green with this colourful juice that's packed full of fresh ingredients. Vibrant spinach, refreshing cucumber, sweet apple and sharp lemon combine to make a delicious drink that's given a lively kick from added root ginger. See method

Ingredients

  • 2.5cm piece root ginger
  • 50g baby spinach leaves
  • ½ cucumber, chopped
  • 1 Granny Smith apple, cored and chopped
  • ½ lemon
If you don't have any spinach, try using kale

Method

  1. Put all the ingredients except the lemon into a blender along with 250ml water. Whizz together until really smooth, scraping down the sides a couple of times.
  2. Stir through the lemon juice to taste and pour into glasses to serve.

Tip: If you have a juicer, try putting the ingredients through the juicer, starting with the ginger. You’ll get enough juice to serve 1 person.
