Ingredients

  • 1 scoop of lemon sorbet
  • 2 tbsp fino sherry
  • 75ml cava, chilled
  • silver edible glitter spray, to serve

Method

  1. Put a scoop of lemon sorbet in the centre of a chilled coupe glass. Top with the fino sherry, then slowly pour in the chilled cava around the edges of the sorbet.
  2. Spray with silver edible glitter spray to serve.

Tip: If catering for a crowd, scoop the sorbet ahead of time and place on a plate or baking tray in the freezer for speedy assembly.
