HE SPANISHPASTA

Cook fusilli according to package instructions; drain and set aside. Make the dressing by combining all the ingredients together. In large bowl combine pasta, onion, red and green pepper, chilli and tomatoes. Add the dressing ingredients and toss well.

Serve immediately.

  • 225g free from fusilli pasta
  • 4tbsp olive oil
  • 1/4tsp salt
  • 1 clove garlic, crushed
  • Juice of 1 lime
  • 1tsp smoked paprika
  • 1/4tsp freshly ground black pepper
  • 80ml tomato juice
  • To garnish

  • 4 spring onions, trimmed and shredded
  • 1 red pepper, deseeded and cut into cubes
  • 1 green pepper, cut in half, deseeded and roughly chopped
  • 1 red chilli, seeded and finely chopped
  • 100g cherry tomatoes, halved
