Ingredients

ice cubes
1 cucumber
10 blueberries
100ml gin
100ml Tesco Finest Light Mediterranean Style Tonic Water
250ml prosecco
4 sprigs of thyme
2 lime wedges

Method

Fill 2 large coupe glasses with ice cubes. Peel 2 long strips of the cucumber with a vegetable peeler and add 1 to each glass with a few blueberries.
Divide the gin and tonic water between each glass and stir to combine. Top each up with 125ml prosecco. Garnish each drink with 2 thyme sprigs and a lime wedge.
