A long, light and refreshing gin cocktail made with lemon juice and topped with a spritz of soda water. If you want to increase the serves, mix the gin, lemon juice and sugar syrup in a jug, then divide between glasses before topping up with ice and soda. See method

  • 50ml gin
  • 20ml lemon juice
  • 15ml sugar syrup
  • handful of ice
  • 100ml soda water, to serve
  • 2 glacé morello cherries, to serve
  • lemon slice, to garnish

Method

  1. Mix the gin, lemon juice and sugar syrup together in a highball glass. Top with ice and soda water.​
