Not only are these rich chocolate chip cookies hiding a gooey toffee centre, they're also super easy to make with just three ingredients. Preheat the oven to gas 6, 200°C, fan 180°C. Cut a 300g pack ready to bake triple chocolate chip cookie dough into 8 slices, flattening each piece slightly with your palm.
Place a toffee in the centre of each then bring the dough up around it to fully encase it. Roll into a ball and place on a lined baking tray, spaced 5cm apart as they will spread as they cook. Flatten the balls slightly again with your palm.
Bake for 10 mins until just firm to the touch. Transfer the cookies (still on the paper) to a wire rack to cool for 5 mins.
Sprinkle with a little sea salt to serve. Best eaten warm on the day they’re made but will keep in an airtight container for up to 2 days.
