This milkshake-style, non-alcoholic drink made with juicy strawberries and creamy coconut is perfect for summer. Serve it in pretty glasses at a BBQ or simply whip up as a refreshing breakfast smoothie.
Slice the strawberries in half. Place them in a plastic container or resealable bag and freeze for 2 hours, until frozen but not too solid.
Put the strawberries in a blender and whizz with the coconut milk, honey and desiccated coconut. Divide between chilled glasses.
