The perfect summer cocktail that's both cooling and refreshing; mango sorbet is blitzed with vodka and lime then topped with prosecco. The recipe serves two but the ingredients can easily be doubled or tripled to serve four or six people. See method

  • 150g mango sorbet
  • 50ml vodka
  • ½ lime, juiced, plus slices to serve
  • 200ml chilled Prosecco
If you don't have any limes, try a lemon instead

  1. Put the sorbet, vodka and lime juice in a blender and blitz until silky smooth. 
  2. Divide the mix between 2 coupe or Champagne glasses, add a splash of prosecco, gently stir with a teaspoon to combine, then top up with more prosecco. 
  3. Garnish the glass with a slice of lime and serve immediately.
