This brightly coloured smoothie is a great way to start the day, and sets you well on the way to getting your five-a-day. Kale is packed full of antioxidants and fibre while the coconut and pineapple give this smoothie a deliciously tropical taste.
Put the kale and pineapple juice in a blender and blend until smooth. Add the remaining ingredients and blitz until really smooth. Check the consistency - if it’s a little thick, add a splash more pineapple juice or some water and blend again.
TIP: If you can’t find coconut yogurt or you already have plain yogurt in the fridge, mix 2 tablespoons yogurt with 1 tablespoon desiccated coconut instead.
