Watermelon makes a refreshing and healthy snack – here we've jazzed it up with a citrussy kick thanks to a quick salt, lime and chilli marinade. Threaded on to skewers, this snack is fun to eat too – keep cool in the fridge for when you need a pick-me-up. See method

Ingredients

  • ¼ tsp sea salt flakes
  • ½ tsp caster sugar​
  • ½ tsp mild chilli powder
  • zest of 1½ limes
  • 300g pack watermelon chunks

Method

  1. Using a pestle and mortar, grind together the salt flakes, caster sugar, chilli powder and the zest from 1 lime to a fine powder.
  2. Divide the watermelon chunks between 5 long skewers. Sprinkle the chilli-salt mix over the watermelon pieces, then grate over the remaining lime zest to serve. Will keep in the fridge for up to 2 days.
