The combination of rum and fresh mint in a cocktail is hard to beat, but the added passionfruit in this mojito really brings it to life.
Spoon the pulp from the passion fruit and divide between 2 tall glasses with the mint leaves, sugar and rum.
Use the end of a rolling pin or a wooden spoon handle to muddle (mash) the ingredients together, releasing their flavour.
Put a handful of crushed ice into each glass and top up with soda water.
