- Combine the blueberries and the mint in a large jug. Crush using the end of a rolling pin.
- Add the sugar and lime juice and stir until the sugar has dissolved. Pour in the rum, then mix again.
- Fill the jug with crushed ice, then top it up with soda water. Add the remaining blueberries, lime wedges and mint sprigs. Serve immediately.
Tip: For a delicious-alcohol free version of this refreshing, fruity tipple, simply replace the rum with elderflower cordial.
