Seven Pimm’s recipes you need to know

Sitting in the sun with a glass of Pimm's is a true sign the British summer has finally arrived... but it might not last for long! With the unpredictable nature of the weather it's best to make the most of it while you can, and these deliciously refreshing Pimm's recipes are perfect for doing just that. Why not try fruity Pimm's ice lollies or glorious Pimm's cakes this summer.

  1. Big chill

When the temperature soars, keep cool and quench your thirst with one of these adults-only Pimm’s ice lollies. Packed with juicy pieces of fruit and a generous kick of Pimm’s, they’re the perfect frozen tipple. Make up a batch for the freezer to have handy as an original end to a dinner party or just as a refreshing treat on a sunny day.

  2. Take the cake

Give your party the wow factor with this sumptuous Pimm’s layer cake, a light sponge sandwich piled high with all the ingredients that go into a jug of Pimm’s, held together with thick dollops of cream, and finally drizzled with a deliciously heady syrup. It’s all the joys of summer… on one cake stand.

  3. All clear

There’s nothing that says summer quite as playfully as jelly and ice cream, and our Pimm’s and lemonade jelly adds grown-up class to a very British favourite. These boozy jellies are not only super nostalgic but also full of summer flavour with fresh strawberries, sweet lemonade and, of course, lashing of Pimm’s.

  4. Sweet and sour

This sticky pulled chicken platter has a fruity Pimm's, orange and ginger marinade that coats the meat and keeps it juicy as it cooks. Prepare ahead for a summer picnic, all it needs is some crusty bread and a crisp, refreshing salad alongside.

  5. Frozen assets

If the weather's warm enough to entertain alfresco, then serving up a refreshing ice cold drink is sure to please. These frozen Pimm’s are made a bit like a granita – simply freeze until almost solid, then scrape the flavour-packed ice into glasses to serve. With a fresh fruit topping, this is a great twist on the classic Pimm's cocktail; try it using ginger beer instead of lemonade for a zingy alternative.

  6. Cool classic

Pimm's and strawberries go almost as well together as strawberries and cream, making this extra berry version of a classic Pimm's the perfect summer cocktail. The fresh berry strawberryade can be made ahead, ready to whip up a jug for your next picnic or alfresco gathering.

  7. From scratch

To bring a bit of DIY to your Pimm's cocktail this summer, have a go at making your own lemonade for a mixer with extra flavour. This Raspberry lemonade is the perfect recipe to try. With just four ingredients, it's quick and easy to make and adds a gorgeous splash of colour to your Pimm's.
