Strawberries make such summery, balanced daiquiris. Freezing the berries in advance means you don’t have to add much ice to get that slushy consistency, so the cocktail flavour is true and strong. Replace all the rum with lemonade for a kid-friendly version. See method

Ingredients

  • 400g hulled strawberries, frozen for at least 4 hours, plus 4 fresh strawberry slices, to garnish
  • 2 tsp caster sugar
  • 2 limes, juiced
  • 175ml white rum
  • 100ml lemonade

Method

  1. In a blender, blitz all the ingredients with 4 ice cubes for a few seconds, reserving the strawberry slices.
  2. Divide the liquid between 4 large, chilled martini glasses. Garnish the rim of each glass with a strawberry slice.

Tip: To make these daiquiris in advance, blend the mixture as below and freeze in a lidded container. When needed, blend again until ‘slushy’ and serve.
