Preheat the oven to gas 6, 200°C, fan 180°C. Unroll the puff pastry sheet onto a large baking tray lined with baking paper. Using a sharp knife, score a border of 2cm around the outer edge, cutting through half the depth of the pastry. Use a fork to prick all over the centre of the pastry. Transfer to the oven to bake for 10 mins until puffed and a light golden brown.
Press down the centre of the pastry with the back of a spoon and spread the mincemeat up to the border.
Roll out the marzipan to 5mm thick, then using a star cutter, or a range of sizes if you have them, stamp out marzipan stars.
Arrange the stars over the mincemeat, then transfer to the oven and bake for 15-18 mins until the pastry is golden and puffed and the marzipan stars have started to caramelise. Store in an airtight container for up to one week.
