i think these muffins are so light & moist you can not tell there is beetroot in them try on your family & friends & see if they can tell

in a large bowl sift the flour,cocoa powder&baking powder then mix in the caster sugar & set aside

in a food processor puree the beetroot then add eggs one at a time then add the oil & vanilla extract & blend until smooth

make a well in the centre of the dry mix & add the beetroot mixture & lightly mix together

then divide the mixture between 12 muffin cases

then bake in a pre-heated oven 180 c/355 f/ gas 4/ for 25 -30 mins or until firm to the touch when pressed down with a finger

cool on a rack & finish with a dusting of icing sugar

you can put into smaller cake cases but keep an eye on the cooking time
