Take your cauliflower cheese to the next level with our spicy version. Make an easy bang bang-style sauce with sriracha and sweet chilli, then cook in the air-fryer for extra crispiness. See method

Ingredients

  • 1 large cauliflower, leaves and stem removed and florets separated
  • 1 tbsp vegetable oil
  • 3 tbsp cornflour
  • 500ml semi-skimmed milk
  • 110g mature Cheddar, grated
  • 3 tbsp sriracha chilli sauce
  • 3 tbsp sweet chilli & garlic sauce
  • 3 spring onions, thinly sliced
  • 1 red chilli, finely sliced​
  • 2 tsp sesame seeds
If you don't have any Cheddar, try using another hard cheese

Method

  1. Toss the cauliflower in the vegetable oil and cook in the air-fryer at 200°C for 10 mins, tossing halfway through, until lightly charred and al dente.
  2. Meanwhile, whisk the cornflour with 4 tbsp milk until you have a smooth paste. Warm the remaining milk in a large saucepan over a medium heat until it starts to steam. Drizzle in the cornflour mix and whisk for 2-3 mins until you have a smooth, glossy sauce. Remove from the heat and stir through the cheese until fully melted, then mix through the siracha and sweet chilli sauce.
  3. Toss the cauliflower through the cheese sauce and fold in half the spring onions. Spoon into an ovenproof dish that fits in the air-fryer, or alternatively, spoon it directly into the base of the air-fryer. Sprinkle over the remaining spring onions, red chilli and the sesame seeds. Cook in the air-fryer at 180°C for 8-10 mins until lightly golden and bubbling hot. Leave to stand for 5 mins before serving.

Tip: You can replace the cauliflower with broccoli, if you like.
