  • 200g 0% fat Greek style yogurt
  • 40g lemon curd
  • 1 tbsp caster sugar​
  • ½ x 411g tin ruby red grapefruit in juice, drained
  • fresh mint leaves, to serve (optional)

  1. Put the yogurt in a bowl and top with dollops of lemon curd. Gently fold through with a spoon, then divide between two short glasses. 
  2. Sprinkle the sugar over a small plate. Gently roll the drained grapefruit slices in the sugar, then place on top of the yogurts. Top with a few small mint leaves to serve, if you like.
