Ingredients

  • 500g (1lb) salmon fillet
  • 1 tsp garlic salt
  • 1 tbsp chipotle purée or sauce, or other chilli sauce
  • 1 tbsp smoked paprika
  • 1 tbsp soft brown sugar

For the mango salsa

  • 2 small mangoes
  • 1 small red onion
  • 2 tbsp fresh coriander
  • 1 lime

To serve

  • 4 small soft tortillas
  • finely shredded white cabbage
  • sour cream
  • chipotle sauce or other hot sauce
If you don't have red onions, try using white, brown or spring onions

Method

  1. Rub the salmon with the garlic salt, chipotle purée, smoked paprika and sugar. Season to taste. Heat the grill and cook on one side until cooked through (about 5-7 minutes depending on the thickness). If using an oiled grill pan, keep the heat medium-low so the fish doesn’t burn. Turn the salmon pieces over to grill the other side.
  2. Meanwhile, toss the mango salsa ingredients in a small bowl. Season to taste.
  3. Flake the salmon and serve warm in soft tortillas with the mango salsa, shredded cabbage, sour cream and hot sauce.
