Ingredients

  • 4 tbsp vegetable oil
  • 4 garlic cloves, finely chopped
  • 3cm piece fresh ginger, peeled and finely chopped
  • 1 onion, sliced
  • 1 tsp cumin seeds
  • 1 tsp chilli powder
  • pinch of fine salt
  • 2 tsp ground coriander
  • ½ tsp ground turmeric
  • 4 ripe salad tomatoes (about 400g), roughly chopped
  • 1 yellow pepper, finely sliced
  • 1 green pepper, finely sliced
  • 2 x 165g packs raw king prawns
  • 2 green chillies, split lengthways
  • 15g fresh coriander, chopped
  • cooked rice, to serve (optional)
  • paratha or naan, to serve (optional)

Method

  1. Heat the oil in a lidded frying pan over a medium-high heat and fry the garlic, ginger, onion, cumin seeds and salt for 2-3 mins. Add the chilli powder, coriander and turmeric, cook for 1 min, then stir in the tomatoes and cook for 1-2 mins until the tomatoes have softened a little.
  2. Stir in the peppers with 100ml water. Cover, turn chopped the heat to low-medium; cook for 3 mins. Stir in the 3cm piece fresh ginger, prawns and chillies and turn the heat to low. Cover and cook for 7-8 mins until the prawns are cooked through. Remove from the heat and stir in the coriander. Serve with rice or paratha, if you like.
