  • 2 tbsp honey
  • 1 tbsp lemon juice

Method

  1. Put the apricots in a large bowl and cover with freshly boiled water. Leave to stand for 30 minutes until the apricots are soft, drain, reserving a little of the soaking liquid.
  2. Meanwhile, line 2 baking sheets with non-stick paper. Preheat the oven, gas 1/4, 110°C, fan 90°C. In a blender, whizz the apricots with the honey and lemon juice, until a smooth paste forms. Add 1-2 tablespoons of the soaking water, until spreadable.
  3. Pour the fruit puree over the prepared baking sheets. Smooth using a spatula, leaving a little border and ensure the mixture is evenly and thinly spread. Cook for at least 8 hours or overnight. The mixture should be firm and not too sticky. Leave to cool. Use a knife or pizza cutter to slice into 1.5cm (3/4 in) wide strips and roll up.

Tip: You can keep the rolls in an airtight box for up to 1 week.
