Apricot rolls recipe

These fruity apricot rolls are the perfect sweet treat for your kids and you'll love them knowing that they're made with all natural ingredients. 

Put the apricots in a large bowl and cover with freshly boiled water. Leave to stand for 30 minutes until the apricots are soft, drain, reserving a little of the soaking liquid.

Meanwhile, line 2 baking sheets with non-stick paper. Preheat the oven, gas 1/4, 110°C, fan 90°C. In a blender, whizz the apricots with the honey and lemon juice, until a smooth paste forms. Add 1-2 tablespoons of the soaking water, until spreadable.

Pour the fruit puree over the prepared baking sheets. Smooth using a spatula, leaving a little border and ensure the mixture is evenly and thinly spread. Cook for at least 8 hours or overnight. The mixture should be firm and not too sticky. Leave to cool. Use a knife or pizza cutter to slice into 1.5cm (3/4 in) wide strips and roll up. 

Tip: You can keep the rolls in an airtight box for up to 1 week.
