There's nothing quite like a summertime barbecue. These smoky pork chops are smothered in a homemade chipotle paste then cooked over coals until charred and juicy, serve with salad and lime wedges for a fresh summer meal See method

Ingredients

  • 1tbsp of smoked paprika
  • 1 red chilli de-seeded and roughly chopped
  • 2tsp demerara sugar
  • 1tbsp groundnut oil or sunflower oil
  • 1 tsp soy sauce
  • 1tbsp tomato ketchup
  • zest and juice of 1 lime
  • 2 sprigs of fresh thyme
  • 4 pork chops about 175g each
  • 4 bay leaf
  • lime wedges, to serve (optional)
  • Salad, to serve (optional)
If you don't have any limes, try a lemon instead

Method

  1. Put everything except the pork and bay leaves in a food processor and blend into a rough paste, smooth over the pork chops. Set aside in the fridge for 20-30 minutes.
  2. When the BBQ coals are white and the flames have died down, top each chop with a bay leaf and grill for 7-10 minutes each side or until the juices of the meat run clear.
  3. Serve with a lime wedges and a crisp green salad.
