For a quick vegetarian breakfast that's ideal for a treat, look no further than this spicy halloumi fry-up recipe. Pile cumin and paprika-spiced halloumi on crisp toast and serve with sweet roast tomatoes, zingy lime, creamy avocado and feisty chilli relish – unbelievably easy yet totally delicious. See method

Ingredients

  • 2 medium tomatoes, halved
  • 1½ tbsp rapeseed or olive oil
  • 15g plain flour
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 150g 30% less fat halloumi, drained and sliced into 8
  • 1 medium ripe avocado, peeled and sliced
  • 1 lime, cut into wedges
  • 2 slices of toast, to serve
  • 2 tbsp Tesco Finest chilli relish, to serve
If you don't have any limes, try a lemon instead

Method

  1. Preheat the oven to gas 7, 220°C, fan 200°C. Put the tomatoes on a baking tray, season the cut side, drizzle with ½ tbsp oil and roast for 12-15 mins until soft.
  2. Meanwhile, mix the flour, spices and some black pepper on a plate. Press each side of the halloumi slices into the spiced flour to coat.
  3. Heat the remaining 1 tbsp oil in a frying pan over a medium heat. Fry the halloumi for 2-3 mins each side until golden and crisp.
  4. Serve the spiced halloumi with the tomatoes, avocado, lime wedges, toast and chilli relish.

Tip: This makes a great brunch for two on Valentine's Day or on a special occasion, but you can also easily increase this recipe to feed a crowd, just fry the halloumi in batches and keep warm until ready to serve.
