Make a big batch of these fiery beef kofte for your next barbecue bash. Flavoured with an aromatic spice paste and served with a rich tomato sauce, these brilliant beef kebabs are perfect for sharing.

In a large bowl, mix together the beef, kofte paste, couscous, onion, garlic, mint and coriander. Season well and form into 32 walnut-sized balls. Thread 4 kofte balls onto each of the 8 skewers. Leave to chill and firm up in the fridge.

Meanwhile, make the sauce. Heat the oil in a pan over a medium heat, add the garlic and cook for 30 seconds. Add the remaining ingredients and cook for 10 minutes, until thickened. Season to taste.

Heat a barbecue or griddle pan until hot then cook the skewers for 4-5 minutes on each side until cooked through. Scatter the kofte balls with the extra herbs and serve with the sauce and flatbread.

  • 2 tbsp couscous
  • 1 small onion, grated
  • 2 garlic cloves, finely grated
  • handful mint leaves, finely chopped, plus extra to serve

  • 1 tbsp tomato purée
  • 2 x 400g tins chopped tomatoes
