Change up a classic Tom Collins cocktail by using blackberry and raspberry flavoured gin, fresh fruit and plenty of fresh basil leaves for a fragrant and refreshing summer drink. See method

Ingredients

  • 2 tbsp lime juice
  • 1 tbsp maple syrup
  • 6 large basil leaves, plus a few extra for garnish
  • 175ml Bombay Bramble Gin
  • 4 blackberries and a handful of blueberries (optional)
  • crushed ice, to serve
  • soda water, to serve

Method

  1. In a cocktail shaker or jug, mix together the lime juice, maple syrup and basil leaves. Muddle or use the end of a rolling pin to gently break down the basil leaves so they infuse into the liquid. Stir in the Bombay Bramble Gin.
  2. In two tall glasses, fill about half-way with crushed ice and the berries, if using. Divide the gin between each glass. Top up with soda water to taste. For a stronger drink, use approximately 150ml soda water. For a weaker drink, use 200ml soda water.
