Ingredients

  • 8 sourdough slices
  • 8 ham slices
  • 150g Gruyère, grated
  • sunflower oil, for frying
  • 4 eggs

For the béchamel sauce

  • 45g unsalted butter
  • 2 tbsp plain flour
  • 175ml whole milk
  • 2 tsp Dijon mustard
  • fresh nutmeg, for grating

Method

  1. To make the béchamel sauce, melt the butter in a pan. Add the flour and stir for a couple of minutes to make a paste. Gradually stir in the milk until you have a thick, smooth sauce. Stir in the mustard, freshly grated nutmeg and some seasoning, to taste.
  2. Preheat the grill to medium-high. Toast the bread on both sides until golden. Top each slice of toast with a ham slice and some grated cheese. Transfer to a baking sheet and spoon over the béchamel sauce. Grill until bubbling and golden.
  3. Meanwhile, heat a little oil in a frying pan. Crack in the eggs and fry until the whites are set but the yolks are still soft. Serve two slices of toast per person, topped with an egg.
