Ingredients

  • 2 tbsp mango chutney
  • 1 x 250g pack Bombay potatoes
  • 2 x plain naan breads
  • 85g grated Cheddar
  • chopped red chilli
  • pomegranate seeds
  • chopped fresh coriander
  • yogurt or raita, to serve
If you don't have any Cheddar, try using another hard cheese

Method

  1. Preheat the oven to gas 7, 220°C, fan 200°C. In a bowl, stir the mango chutney into the Bombay potatoes, halving any large pieces. Spread over the naan breads, leaving a small border.
  2. Top with grated Cheddar and a little chopped red chilli. Bake for 15 minutes, until melted and golden.
  3. Remove and leave to cool for 2 minutes, before scattering over pomegranate seeds and chopped fresh coriander. Cut into bite-size squares and serve with yogurt or raita.
