Ingredients

  • 75g (3oz) butter
  • 110g (3 3/4oz) plain four
  • 3 medium eggs
  • 75g (3oz) Gruyère, diced
  • 75g (3oz) skinless chorizo, cooked and diced

Method

  1. Preheat the oven to gas 4, 180°C, fan 160°C. In a pan, combine the butter, 175ml (6f oz) water and 1/2 tsp salt. Bring to the boil, remove from the heat and stir in the flour until smooth.
  2. Return to a medium heat and beat for 1 minute. Remove from the heat and leave for 1 minute. Beat in the eggs, one at a time, until glossy, add the Gruyère and chorizo. Season with black pepper.
  3. Spoon 2cm (3/4in) balls of the mixture onto 2 greased baking trays. Bake for 30 minutes, or until puffed and golden. Pierce to allow the steam out. Serve warm.
