You've heard of salt and pepper chips, but have you tried salt and pepper hash browns? Fry the frozen favourite with peppers, garlic and Chinese five-spice for crispy and golden hash browns. These are delicious served with crispy fried eggs for a weekend brunch treat. See method

Ingredients

  • 12 hash browns
  • 1 tsp sugar
  • 1 tsp ground black pepper
  • ½ tsp ground white pepper
  • ½ tsp Chinese five-spice
  • ½ tsp salt
  • 1 tbsp vegetable oil
  • 1 onion, roughly chopped
  • 2 peppers (any colour), roughly chopped
  • 3 garlic cloves, crushed​
  • 3cm piece ginger, finely chopped
  • 1 red chilli, finely sliced (optional)
  • 1 spring onion, finely sliced, to serve
  • sesame seeds, to serve (optional)
  • 1 lime, cut in wedges, to serve (optional)
If you don't have any limes, try a lemon instead

Method

  1. Cook the hash browns according to pack instructions.
  2. Meanwhile combine the sugar, black and white pepper, Chinese five-spice and salt in a small bowl.
  3. Set a frying pan over a medium-high heat and add the oil. When hot, stir-fry the onion, peppers, garlic, ginger and half the chilli (if using) for 5-8 minutes until softened.
  4. When the hash browns are golden and crisp, add them to the frying pan with the spice mix. Stir gently for a couple of minutes to coat everything in the spices.
  5. Serve on a platter, scattered with the spring onion, sesame seeds and remaining chilli.
