Using storecupboard staples, this spiced mayo-marinated pork loin steak recipe makes for a meal that uses minimal ingredients. Spicy cayenne, crushed fennel seeds and plenty of lemon pack the pork with flavour whilst the mayo in the marinade helps form a crisp golden crust as the pork cooks. See method

Ingredients

  • 100g mayonnaise
  • ½ lemon, zested and juiced, plus wedges to serve
  • ½ tsp cayenne pepper
  • ½ tsp ground cumin
  • ½ tbsp fennel seeds
  • ½ small garlic clove, crushed
  • 4 pork loin steaks
  • 1 tbsp olive oil

Method

  1. Mix the mayonnaise, lemon juice and zest, cayenne, cumin, fennel and garlic together in a medium mixing bowl and season well. Add the pork loin steaks to the bowl and toss to coat. Set aside, covered with clingfilm, to marinate for 30 mins, or ideally overnight (in the fridge).
  2. Heat the oven to gas 6, 200˚C, fan 180˚C and heat the oil in a large frying pan set over a medium-high heat. Shake the excess marinade off and fry the pork for 2 mins each side, then transfer to a baking tray and bake in the oven for 15-17 mins until golden and cooked through.  Allow to rest for 5 mins before serving with lemon wedges.
