If you're looking for some speedy Christmas canapés try these cheesy filo cigars. Creamy goat's cheese mashed with honey, thyme and walnuts is cooked inside filo pastry rolls and baked until crisp and golden for a festive finger food feast. See method

Ingredients

  • 100g goat’s cheese
  • 1 tbsp clear honey, plus extra to drizzle
  • 1 tbsp fresh thyme, leaves only, plus extra to garnish
  • 80g walnut pieces, toasted and roughly chopped
  • 6 sheets filo pastry
  • 30g butter, melted
You can use a hard cheese, like Cheddar or Stilton, instead of the goat's cheese. Just gently mash before use.

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Line a large baking tray with nonstick baking paper. In a small bowl, mash together the goat’s cheese, honey, thyme and walnuts.

  2. Cut each filo sheet widthways into 3 long strips and cover with a clean damp tea towel. 

  3. To make the cigars, remove one rectangle and brush with the melted butter, shape 1 tbsp goat’s cheese mixture into small log and place at the end of the short side of the rectangle, leaving 2cm border at each end. Roll up into a cigar shape and transfer to the baking tray, seam-side down. Repeat until you have 12 cigars. 

  4. Bake for 15-20 mins until golden and crisp. Allow to cool for at least 10 mins, then pile up on a serving dish and drizzle over a little extra honey. Scatter over a few thyme leaves and serve.
