Cowboy turkey and bean pie recipe

Serve up a cowboy-style dinner with this BBQ bean and turkey pie. We've topped this with ice cream scoop mash for a taste of nostalgia. Finish with a generous grating of cheese on top for a fun dinner that the whole family will love. See method

Ingredients

  • 1.25kg bag Maris Piper white potatoes, peeled and cut into similar size chunks
  • splash of milk
  • 125g mature Cheddar, grated
  • 1 tbsp rapeseed oil
  • 500g pack 2% fat turkey breast mince
  • 1 red onion, finely chopped​
  • 3-pack peppers (1 of each colour), deseeded and sliced
  • 1½ tsp ground cumin
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 4 tbsp BBQ sauce
  • 1 tbsp tomato purée​
  • 400g tin chopped tomatoes
  • steamed green veg, to serve

Method

  1. Put the potatoes into a large pan and cover with cold water. Season with salt, then bring to the boil and simmer vigorously for 12-15 mins until fork tender. Drain and allow to steam dry. Mash well with the milk, plenty of seasoning and half the cheese. Set aside.
  2. Meanwhile, preheat the oven to gas 6, 200°C, fan 180°C. Heat half the oil in a large saucepan and brown the mince over a medium-high heat for 5-6 mins, breaking up with a wooden spoon as you go. Remove using a slotted spoon and set aside.
  3. Heat the remaining oil in the pan and cook the onion and peppers for 4-5 mins until beginning to soften. Stir in the spices, BBQ sauce and tomato purée and cook for 1 min until fragrant.
  4. Stir in the chopped tomatoes (swirling out the can with a splash of water) and beans (including the tin liquid), then return the mince to the pan. Bring to a simmer and cook for 8-10 mins until thickened slightly.
  5. Transfer the mince mixture to a baking dish about 21cm square. Use an ice cream scoop to spoon on the mash, then sprinkle with the remaining cheese. Bake for 25-30 mins until bubbling and golden. Serve with steamed greens.

Tip: Use beef mince or plant-based if you prefer.
