Perfect for entertaining, these sweet, spiced poached pears can be made the day before and stored in the fridge until needed. Serve simply with a drizzle of rich chocolate sauce. See method

Ingredients

  • 4 pears
  • 1ltr apple juice
  • 3 star anise
  • 1 tbsp honey
  • 75g dark chocolate
  • 75ml single cream
If you don't have any pears, try using apples

Method

  1. Carefully peel the pears from tip to base in one strip, to give them a neat shape. Place in a pan of apple juice, making sure they are totally submerged, add the star anise and honey and simmer gently for 15 mins. Remove from the heat and leave to cool.
  2. Reduce the liquid by half and allow to cool. Pour over the pears. Melt chocolate in a bain marie. Add the cream and mix until smooth. Serve with the pears.

Tip: You can also poach pears in wine — serve with crème fraîche.
