Take Friday night pizza to a new level. Top ready-made bases with this homemade batch-cook tomato sauce, jarred artichokes and fennel-flavoured sausage. Finish with a good drizzle of sweet and spicy honey. See method

Ingredients

  • 4 tbsp honey
  • 1 tsp Tabasco
  • 350g sausage meat
  • 1 tsp fennel seeds
  • 4 pizza bases or flatbreads
  • 200g homemade tomato sauce
  • 1 jar antipasti artichoke halves, drained (optional)
  • pinch of chilli flakes
  • 200g pizza mozzarella, sliced
  • rocket, to garnish

Method

  1. Preheat the oven to gas 7, 220°C, fan 200°C. Mix together the honey and Tabasco. Add more if you prefer a spicier honey!
  2. In a medium pan, fry the sausage meat with the crushed fennel seeds over a medium-high heat to cook for about 5 mins. Use a wooden spoon to break the sausage meat up into chunks as it cooks.
  3. Lay the pizza bases or flatbreads on a baking tray and divide the homemade tomato sauce between them. Top with the spicy sausage meat, artichokes, if using, and then a sprinkle of chilli flakes and the sliced mozzarella. Bake for 5-8 mins until cooked.
  4. Serve, topped with rocket and a drizzle of hot honey.

Tip: Swap the sausage meat for 4 sausages of any variety.
