With a cheesy, melted Brie and cranberry sauce topping, these gooey focaccia bites make the perfect Christmas canapé. Preheat the grill to high. Cut the focaccia from a 240g pack mozzarella and red onion focaccia in half. Place under the hot grill and toast until golden.
Put the toasted halves on a baking tray, then spread ½ tbsp cranberry sauce over each half. Cut a 190g wedge of ripened French Brie into thin slices and lay over the cranberry sauce.
Put the tray under the grill for 2-3 mins or until the cheese has melted. Cut each half into 4.
Serve the slices warm.
