With a cheesy, melted Brie and cranberry sauce topping, these gooey focaccia bites make the perfect Christmas canapé. What’s more, they are made with just three ingredients and take less than 20 minutes to prepare. Don’t forget to grab the ingredients list at the bottom of the page before you go shopping.
Preheat the grill to high. Cut the focaccia from a 240g pack mozzarella and red onion focaccia in half. Place under the hot grill and toast until golden.
Put the toasted halves on a baking tray, then spread ½ tbsp cranberry sauce over each half. Cut a 190g wedge of ripened French Brie into thin slices and lay over the cranberry sauce.
Put the tray under the grill for 2-3 mins or until the cheese has melted. Cut each half into 4.
Serve the slices warm.
