This vibrant dish makes the most of Kanzi apples, dessert apples with a mildly tart flavour. Add to date and blue cheese for a sweet, sharp salad melange that’s bursting with spring flavour.
For the dressing, put the vinegar, oil, mustard and honey in a lidded jar. Screw the lid on tightly and shake well, until combined. Set aside.
Put the apple slices in a large bowl, squeeze over the lemon juice and toss to coat.
Add the dates, lettuce and watercress. Pour over the dressing and gently mix, until combined. Arrange the salad on a serving plate and crumble over the cheese.
