Apple, date and blue cheese salad recipe

This vibrant dish makes the most of Kanzi apples, dessert apples with a mildly tart flavour. Add to date and blue cheese for a sweet, sharp salad melange that’s bursting with spring flavour. See method

Ingredients

  • 1 Kanzi® apple, cored and thinly sliced
  • 1/2 lemon
  • 150g (5oz) dates, stoned and chopped
  • 2 little gem lettuce, leaves separated
  • 40g (1 1/2oz) watercress
  • 75g (3oz) blue cheese

For the dressing:

  • 2 tbsp cider vinegar
  • 2 tbsp olive oil
  • 1 tsp Dijon mustard
  • 1 tsp clear honey

Method

  1. For the dressing, put the vinegar, oil, mustard and honey in a lidded jar. Screw the lid on tightly and shake well, until combined. Set aside.
  2. Put the apple slices in a large bowl, squeeze over the lemon juice and toss to coat.
  3. Add the dates, lettuce and watercress. Pour over the dressing and gently mix, until combined. Arrange the salad on a serving plate and crumble over the cheese.
