Ingredients
- 1 baguette, cut into 4 equal pieces
- 4 tbsp mayonnaise
- 2 small, boneless, ready-roasted chicken breasts, thinly sliced
- ¼ cucumber, sliced
- 1/2 carrot, peeled and coarsely grated
- handful baby gem lettuce leaves, chopped
- large handful coriander leaves, chopped
- 4 tbsp sweet chilli sauce

Method
- Slice each baguette piece in half and spread with 1 tbsp mayonnaise.
- Divide the chicken, cucumber, lettuce and carrot between each, then scatter over the coriander.
