Ingredients

  • 4 individual baguettes
  • 4 tbsp mayonnaise
  • 2 small, boneless, ready-roasted chicken breasts, thinly sliced
  • 1/4 cucumber, sliced
  • 1/2 carrot, peeled and coarsely grated
  • handful baby gem lettuce leaves, chopped
  • large handful coriander leaves, chopped
  • 4 tbsp Thai sweet chilli sauce

Method

  1. Slice each baguette in half and spread with 1 tbsp mayonnaise.
  2. Divide the chicken, cucumber, lettuce and carrot between each, then scatter over the coriander.
  3. Drizzle with the sweet chilli sauce. Sandwich the halves to serve.
