Spruce up your lunchbox with this Asian-style chicken sandwich, made with fresh, crunchy vegetables and juicy roast chicken drizzled with a tangy sweet chilli sauce.
Slice each baguette in half and spread with 1 tbsp mayonnaise. Divide the chicken, cucumber, lettuce and carrot between each, then scatter over the coriander. Drizzle with the sweet chilli sauce. Sandwich the halves to serve.
