  • 75g (3oz) Stilton or other blue cheese
  • 100ml soured cream
  • splash Tabasco sauce
  • handful chives, chopped, plus extra to serve
If you don't have sour cream, use crème fraîche or yogurt

  1. Crumble three quarters of the blue cheese into a small bowl, then stir in the soured cream and mash together with a fork until combined.
  2. Stir in the Tabasco, to taste, and the chopped chives. To serve, crumble over the remaining blue cheese and top with a sprinkling of extra chives and some freshly ground black pepper.
