Chipotle honey-mustard dressing recipe

Taking cue from the hot honey trend, this honey mustard dressing is a must-try. Brilliant for pepping up roasted veg as well as any type of salad, it's a handy cook's shortcut to have in the fridge all year round. Add more crushed chillies if you like it hot! See method

Ingredients

3 tbsp clear honey
3 tbsp wholegrain mustard
5 tbsp lemon juice, plus extra to taste
75ml extra-virgin olive oil
1 tsp chipotle chilli paste
¼ tsp crushed chillies, plus extra to taste

Method

Whisk together the honey and mustard, along with the lemon juice, olive oil, chipotle chilli paste and crushed chillies. Season well. Taste and add a pinch more crushed chillies or a squeeze more lemon juice, if you like.
Drizzle over salads or roasted vegetables. Store in an airtight container in the fridge for up to 1 week, shaking well before using.
