Ingredients

  • 4 small boneless skinless chicken breasts, cut into chunks
  • 2 tbsp of madras curry paste
  • 2 tbsp of Tesco Greek style natural yogurt
  • juice of half of lemon
  • 1 tsp sea salt
  • 1 small red onion finely sliced
  • 1 small white onion finely sliced
  • small pack of coriander coarsely chopped
  • 1 tbsp white wine vinegar
  • 1-2 tbsp light olive oil
If you don't have red onions, try using white, brown or spring onions

Method

  1. Mix together all of the ingredients making sure the chicken is well coated and allow to marinate in the fridge for at least half an hour. Thread the chicken onto four skewers and cook on a hot barbecue or under a grill, turning for about 10 mins checking that the chicken is cooked through and the juices run clear.
  2. Toss together all the remaining ingredients and serve the onion salad with the chicken kebabs.
