Switch up a classic mojito cocktail by using Pimm's and fresh cucumber in this English garden inspired drink. Top up with refreshing soda water, plenty of ice and zingy lime for the ideal summer cooler. See method

Ingredients

  • 2 long ribbons of cucumber
  • handful ice cubes
  • 4 mint sprigs, leaves picked
  • 100ml Pimm’s
  • 25ml simple sugar syrup
  • 2 limes, juiced
  • 300ml soda water, chilled

Method

  1. Wrap a ribbon of cucumber around the inside of 2 highball glasses. Fill with ice cubes and mint.
  2. In a jug, mix together the Pimm’s, sugar syrup, lime juice and soda. Divide between the glasses and serve.

Tip

You can buy ready-made sugar syrup, but it’s also easy to make at home and lasts for up to a week in the fridge. Simply heat together equal quantities of caster sugar and water in a saucepan until the sugar has dissolved, then leave to cool at room temperature before using.
